Folle Blanche, the king of grape varieties before the phylloxera crisis, is now very rare in the Cognac region, accounting for just 1% of the total. This is because its cultivation is more technical and delicate. Yet this grape variety is renowned for the finesse of its eaux-de-vie, with their intense floral bouquet. Claude Thorin is one of the few winegrowers still cultivating it today.
